Cut the excess fat off the chicken thigh and coat with Mexican seasoning. Cut the tomato into slices and dice lettuce. Cook chicken thigh in a pan until cooked all the way through. Once cooked remove from pan.
Toast bun, clean the frying pan and spray with canola oil, cut the buns in half and toast either side on the pan.
Assemble the burger by adding tomato, lettuce, mayonnaise, perinaise and enjoy.
